The grapes to produce Valençay “Le Claux Delorme” Domaines Minchin were harvested at optimal maturity and gently crushed with a pneumatic press. Valençay “Le Claux Delorme” Domaines Minchin fermentation took place with selected yeasts in temperature controlled tanks and winemaker Bertrand ensured the temperatures remained low to preserve the purity of fruit and aromatics of the Sauvignon Blanc grape. The wine was aged in vats on its lees for five to six months to impart texture and complexity.

Armance B. is a sparkling organic wine made by Vienne winery Ampelidae, and named after its owner Frédéric Brochet’s grandmother who started the family tradition of producing bubbly wines back in 1899.
Tropical notes of ripe pineapple and mango, with hints of passion fruit, come with ripe stonefruit aromas of apricot, for an intense and pleasing fruity smell. You’ll have to add well-integrated notes of sour-dough brioche, and subtle vanilla, caramel and nutmeg from what appears to be oaky scents, to get a complete picture of this sparkling wine’s nose. The typical profile of a mineral yet ripe tropical Chardonnay, aged for quite a while on less (the sour dough element) and with some oak.

A single-vineyard selection from a 100% flint-stone plot outside the hamlet of Les Berthiers, near Pouilly-sur-Loire. The vineyard sits on a slope and faces southeast. Some of the vineyard’s flint rocks are the size of grapefruit; when you strike two together, the smell is unmistakably that of firecracker smoke.

The wine's beautiful ruby red color is complemented by a wild berry nose with hints of vanilla oak. The taste profile is balanced between fruit and oak, and has nice acidity that should allow the wine to hold for years from the bottling date. The wine also has gritty tannins that should taper off with proper aging into a more rounded palate. Flavors of red cherry and red cassis are on the forefront of each sip, with more woody flavors being revealed on a mouthwatering finish.
